RECIPE: We read somewhere that no matter what the problem is, there’s a type of potato that can solve it.
That’s probably not true, but potatoes are yummy. We found this recipe at Farmers’ Almanac for a tater tot casserole that might even make picky kids happy. Start with one small onion, chopped; two pounds of ground beef; a 10.5 oz. can cream of chicken (or cream of mushroom) condensed soup; 2/3 cup milk; 2 cups of fresh or frozen chopped vegetables such as carrots, peas, corn, or green beans; 2 cups cheddar cheese, grated; 28 oz. bag of tater tots; and salt and pepper to taste.
Directions: Sauté the onion and ground beef together until the meat is cooked throughout. Add vegetables and cook for another 10 minutes. Add the soup and milk. Stir thoroughly.
Pour the mix into a 9×13” baking dish. Evenly sprinkle the shredded cheese over the meat and vegetables. Top with a layer of tater tots carefully placed in rows.
Bake at 375 degrees F for 40-50 minutes, until the tater tot casserole is golden brown.
By our thinking, another layer of cheese should be melted on the top, but that’s a personal preference. It sure does sound tasty.

And this from author Louisa May Alcott: “Money is the root of all evil, and yet it is such a useful root that we cannot get on without it any more than we can without potatoes.”
