NATIONAL NUTRITION MONTH: It’s hard to believe a snack food that tastes so good can actually be good for you, but it’s true! Popcorn is a whole grain that is 100% unprocessed with no additional additives, hidden ingredients or GMOs. In other words this vegan/ vegetarian snack contains no Gluten or Trans Fats.

Try this sweet and savory popcorn recipe in honor of National Nutrition Month and St. Patrick’s Day this March. Make these delicious treats with family and then watch them magically disappear.

Minty Green Popcorn Clusters are made with 12 cups of unsalted, unbuttered popped popcorn, 4 cups of mini marshmallows, 2 tablespoons of butter or light olive oil, half a teaspoon of salt, one tablespoon of green food coloring, one-fourth a teaspoon of peppermint extract and one cup of green candy-coated chocolates.

First place the popcorn in a large mixing bowl, then in a saucepan set over medium heat melt the marshmallows, butter and salt. Stir the mixture in the saucepan occasionally, until smooth. Then remove the pan from the stove top and stir in the food coloring and peppermint extract. Immediately after, toss the marshmallow mixture with the popcorn and let cool for two to three minutes before tossing in the chocolate candies.

To finalize the recipe, shape 3 tablespoonfuls of the popcorn mixture into small clusters — the mixture should produce about 32 clusters. Place all clusters on a waxed paper-lined baking sheet to let cool completely before consumption.
