USdairy.com tells us some facts about cheese: Cheeses come in eight varieties including blue, hard, pasta filata, processed, semi-hard, semi-soft, soft and fresh, and soft-ripened.
One of the main reasons why we love cheese is simple: Cheese is made from just a few basic ingredients. Only four simple ingredients are needed for natural cheese: milk, salt, a starter culture and an enzyme called rennet. In fact, you can even buy the ingredients or a kit to make cheese at home.
Processed cheese, which was originally developed for wartime, is made from high-quality natural cheese. The processing makes it shelf stable, allowing the cheese to maintain its flavor, texture and smoothness.
History shows that the Pilgrims had their priorities straight: They made sure to bring cheese for their voyage on the Mayflower. Once they landed, many of those who opened dairies produced cheese, but it wasn’t until 1851 when the first cheese factory opened.
Today, about one-third of all milk produced every year in the United States goes toward making cheese.
For a bit of a different spin, here’s a recipe for Greek popcorn, with feta cheese of course.
Ingredients: 2 quarts popped popcorn, Cooking spray, 1 teaspoon dried oregano, 1/2 teaspoon lemon zest, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, Freshly ground black pepper, 2 tablespoons crumbled feta cheese
Directions: Place popcorn in a large bowl. Spray lightly with cooking spray and toss. Sprinkle remaining ingredients over popcorn and toss again. Serve immediately.
