WHAT’S FOR DINNER? The busy life of back to school begins next week. And the age old question of children returning from the classroom to home each night is: What’s for Dinner!
Here are a few simple meals for the first week of school that could quickly and easily answer the question, as well as take the stress off the “chef.”
Potato/Sausage casserole — This is breakfast for dinner. Slice up (¼ in thick) potatoes, about 3 lbs. of Yukon work great, then boil til soft. Drain and add butter. Dice up an onion and saute with your favorite ground breakfast sausage, drain. Put all in an oiled baking dish and cover with your fave cheese. Bake for 7-10 min. at 350 degrees.
