About Ole Hickory Tavern

Gary Thrush and his wife, Kathryn, bought the building where they operate their business the Ole Hickory Tavern in 2012 and opened for business on July 25 of that year.  The building had operated as Nye’s Bar and Tavern prior to that, and had opened for business under that name in 1958.  Gary said he and his wife talked to the previous owners last year and they decided they wanted to get into the bar and restaurant business and they wanted to start an Irish Pub.

According to Gary, he and his wife had talked about doing something like that for a number of years.  He said they had visited Ireland back in 2008, and so they decided that it’d be neat to have an Irish Pub in Salamanca.  Since the former Nye’s Bar and Tavern became available, they decided it posed a perfect place to open their pub.

Gary had built up quite a bit of experience for himself in the bar and restaurant field.  He has worked in bars and restaurants for about thirty years, bar tending, cooking and other things of that nature.  Gary also worked in the human service field for about thirty-five years, which also helps him in serving his customers at the Ole Hickory Tavern.  As such, he thought that running the pub would prove kind of neat, kind of fun to do.

As for how he runs his pub, Gary had this to say, “It’s a family project.  My wife and I own it and our son, Jamie, works for us.  Our daughter, Jody Wheeler, does the book-keeping and stuff like that, so it’s really a family project.  My son-in-law, Chad Wheeler, really did all the design work and all the renovations for us, everything that we’ve done, electrical work, the wood working, and continues to do that stuff for us.”

Jamie helps Gary out by bartending and cooking.  Kathryn works somewhere else full-time as well, but she helps manage the pub and she’ll come in on Friday nights and help serve fish fries.  She’ll also fill in behind the bar.  According to Gary, for her “it’s kind of like a fun thing to do, just be present and that kind of stuff.  You know, to be involved in the day-to-day operations of it.”

When it comes to their most popular dishes, Gary said their fish fries have proven quite popular.  He said they also have a chicken wing they call the Blarney Wing and that has become very popular as well.  Gary said his son Jamie developed the sauce for it himself, experimenting until he came up with it.

Gary said, “On the seventeenth of every month we do Corned Beef and Cabbage, as an Irish tradition.  We also do some other Irish foods like Shepherd’s Pie and Bangers and Mash.  Reubens too, we do a lot of Reubens and they’re popular also.  So we try and have a little bit of Irish flare to it, you know?  We have the Guiness burger that’s soaked in Guiness beer.  So just a few things that are sort of traditional to the Irish, to the Irish Pubs.

Gary said he thinks two things really help to set his business apart in the area.  First, the fact that they’re an Irish Pub sets them apart because not too many of them operate in the area.  He said they serve as Salamanca’s only Irish Pub and he only knows of a couple in Olean.

“But also we’re still the old neighborhood style bar, where you know, we look forward to families with their kids coming in and having dinner and, you know, sort of a meeting place for people in the neighborhood, so back to the old days when it used to be, you know, every neighborhood had their own local little bar.  We’re trying to bring that back, with this here.”
